From the mineral-driven whites of Germany’s steep riverbanks to the bold, high-altitude reds of Alto Adige and Savoie, our list showcases wines that embody purity, elegance, and a deep sense of place.
Featuring both familiar and lesser-known varieties, our carefully curated selection rotates seasonally, offering wines by the glass and bottle, along with rare and allocated gems. Above all, these wines are approachable, accessibly priced, and effortlessly complement the bold, flavorful dishes of the Biersal menu. Chardonnay– Südtirol, Italy

Riesling– Mosel, Germany.
Dry sparkling riesling. Apricot, green apple and mineral accented vibrant acidity.
Claus Preisinger 2022 ‘Ordinaire’ Pét Nat Rosé
90% Pinot Noir/ 10% Blaufrankisch–Neusiedlersee, Austria.
Single fermentation dry sparkling rosé. Luscious fresh raspberry, wild cherry and strawberry flavors with savory herbs and spice accents.
Volker Wein 2022 ‘Orange Vibes’
Grüner Veltliner– Langenlois, Austria.
Skin macerated (aka orange wine) Grüner Veltliner. A clean and delicious orange, lychee, florals, white pepper, dry and refreshing.
Peter Lauer 2023 ‘Barrel X’ Riesling
Riesling– Mosel, Germany.
Not all rieslings are sweet! In fact most riesling consumed in Germany is dry. Peter Lauer is one of the most sought after riesling producers in Germany. Soaring acidity. Very mild sweetness. Ripe peach, green melon and chiseled minerality.
Ingrid Groiss 2020 Grüner Veltliner Reserve Ried en der Shablau
Grüner Veltliner– Weinviertel, Austria.
Single vineyard, extended bottle aging “reserve” wine. Flint, pear, saline, rocks, white lily flowers on nose. Palate is mineral-driven, with lime zest, green apple and lemon curd on an effervescent mouth feel, finishing with stone.
Tatomer 2022 Pinot Noir
Pinot Noir– Santa Barbara County, California.
Austrian style Pinot Noir made in Santa Barbara. Graham Tatomer worked and learned winemaking in Austria before returning to his home in Santa Barbara County to make wine. This appellation cuvée hits all the right notes, starting with a light hue in the glass that opens on the raspberry-laden nose into bay leaf, lavender, rosemary blossom and white pepper aromas. The palate is crunchy in style, as tart cranberry flavors meet with eucalyptus elements.
Erste + Neue 2023 Lagrein
Lagrein– Alto Adige, Italy.
Lagrein is rarely found outside of its native source in Alto Adige. This Lagrein typically offers deep, dark ruby hues with intense aromas of blackberry, black cherry, violets, and subtle earthy notes. On the palate, it is full-bodied with soft tannins and flavors of dark fruit, chocolate, and hints of spice, balanced by a lively acidity.
Rosi Schuster 2022 Blaufränkisch
Blaufränkisch– Leithaberg, Austria.
Blaufränkisch is grown in Germany and Hungary, but Austria produces the most. Dark ruby, opaque core, purple reflections. Aromas of blackberry, liquorice and fresh cherries, a hint of orange zest. Tightly woven, firm and elegant, subtle sweetness, full of finesse, with ripe, supporting tannins and a chalky-citrusy coolness on the persistent, mineral finish.
